A large production kitchen will process our fish products, make salad mixes and prepare foods for market, while also providing a space for cooking demonstrations to teach healthy choices for preparing vegetables. We will also offer the kitchen space to other area gardens and farms, giving them a place to create value added products from their produce, increasing their financial well-being.
A large vermiform (worm) composting program will be used, converting tons of organic waste from grocery stores, restaurants and food production facilities along with leaf collection and tree removal companies into rich soil. Worms will be used in the process to create worm castings, which will be used as fertilizer, both in the vegetable beds in the greenhouse and also sold for people to use in their home gardens. Also in consideration is the addition of animals including chickens, rabbits and goats for protein as well as manure for the compost. A small apiary will provide bees for pollination of the plants, production of honey and beeswax.
